3 large tomatoes, medium dice
1 large yellow pepper, medium dice
1 red pepper, medium dice
1 large cucumber, small dice
1 small red onion, thin sliced
1 cup feta cheese, crumbled
1 tbsp fresh oregano, stemmed
2 cloves garlic
juice of 1 lemon (use fresh)
3 tbsp red wine vinegar
1 cup olive oil
1 tsp salt
1/3 tsp pepper
Place the first 6 ingredients in a large bowl, set aside. In a blender mix the last 7 ingredients and add to the vegetable mixture, season to taste.
