
1 tablespoon coconut oil
1/2 cup arborio rice
2 3/4 cups coconut milk
1 teaspoon ground cinnamon
Stevia or honey to sweeten
Heat coconut oil in a medium sized pot. Stir in the arborio rice on medium/low heat. Once the rice becomes slightly translucent (after 30 second to a minute), add the coconut milk 1/2 cup at a time. NOTE: Be sure to stir often so the rice doesn’t stick to the bottom of the pot. Once the rice soaks up coconut milk, add the next 1/2 cup and so on, until you only have 3/4 of a cup of coconut milk left. At this point, the rice should look nice and creamy. Add in the 3/4 cup of coconut milk that’s left. Stir rapidly to let some air into the rice pudding. When most of the coconut milk is soaked up by the rice, remove the pot from the heat. Add in honey or stevia to sweeten (optional). Let the rice pudding sit for a few minutes before serving. Top with cinnamon.
