1/2 cup pitted dates if hard then soaked in hot water for 5 minutes and then drained
1/4 cup coconut oil melted
1/2 cup unsweetened apple sauce
1-2 Tbsp honey
3/4 cups old fashioned rolled oats made into oat flour
1 cup old fashioned rolled oats
1/2 cup chopped cashews
1/2 cup sesame seeds
1/4 tsp sea salt
1/2 tsp cinnamon
1/4 tsp ground ginger
1/8 tsp cardamom
Preheat oven to 350 F. Put all wet ingredients and dates in a blender and blend until smooth.
Combine wet and dry ingredients. Scoop out one large ice cream scoop per cookie and place on a parchment paper lined baking sheet and flatten with your fingers to about 1/2 inch thickness. Bake for approximately 20-25 minutes until golden. Beware of not burning the bottoms. Cool on a cookie sheet and store in an airtight container preferably in the fridge.
