Chicken – breasts, thighs, the whole thing. This recipe is enough to cover a whole chicken comfortably.
8oz Zevia Cola
8oz tomato sauce
small handful of chopped shallots
2 tsp balsamic vinegar
2 tsp lemon juice
1 tsp chopped garlic
salt & pepper to taste
– Combine all ingredients except for the chicken in a large bowl, stir and season with salt & pepper to taste. Add the defrosted, raw chicken into the marinade, wrap and refrigerate for a couple of hours if you can. If not, it still very tasty and tender without it.
– Bake at 350°F for roughly 35-60 minutes until the chicken reaches 165°F internally. The timing will depend on the size and cut of your chicken, your oven, etc.
